Let's start with the easiest one (and a famous one)-
1) Campbell biology
Level: Intermediate
What you will learn: Various things about biology: Chemistry and history of life, cell, genetics, evolution, plants and animal form & function, ecology. You will know everything (basic) from what is carbohydrate, protein, DNA to how your brain works.
PROS:
1) very lucid writing.
2) you do not need to have any prior knowledge.
3) filled with great picture/ illustrations that help you grasp things.
4) Answers at the end of the book.
Cons:
1) Not as in-depth as other biology books.
2) Contains less experiments.
3) Easy questions ( test concept understanding) & not all questions have been answered at the end of the book, particularly scientific skill exercise questions have not been answered.
2) Molecular biology of the cell

Level: advanced
What you will learn: Structure & functions of various organs.
4) Ecology
Level: Advanced
What you will learn: Various things about ecology: From Evolution, how organisms cope with their environment, what is wind, ocean currents, climate change to population & behavioral ecology.
Cons:
Not lucid (Author uses complex language).
Level: very advanced
What you will learn: Physics of the biology.
6) Voet Biochemistry
Level: very advanced
What you will learn: Metabolism, Structure and function of protein, DNA, photosynthesis, signal transduction, biosynthesis, mechanisms of enzyme action etc.
7) Plant physiology & development
Level: very advanced
What you will learn: Various functions peformed by plants & how they do it.
Level: very advanced
What you will learn: Various things about gene, chromosome, DNA.
9) Janeway immunobiology
Level: very advanced
What you will learn: How body defends & fights from infections, about autoimmune disease.
10) Principles of neural science
Level: very advanced
What you will learn: Everything about the brain (theory): cell & molecular biology of the neuron, vision, smell & taste, pain, feelings, nurotransmitters, movement, language & thought etc.
Cons: Rarely get updated.
I have carefully chosen these books so that you learn various things
and these books are best in their respective field, some of the authors have even got nobel prize (for their research work).
These books should be enough to give you decent biology knowledge but if you want more:

11) Brock biology of microorganisms
12) Developmental biology
13) Genetics: Analysis and Principles (didn't like its table of contents & some explanations that I read (It was short & not easy to understand) but recommended by biologists & professors.)
14) Medical physiology
